in the mid 90s there was a little cafe on baseball street. the fellow in there could whip up a perfect omelette with a thin egg base and ham and cheese oozing out - indeed it is from him that I learned the art if the one egg omm. not quite a pancake but would certainly have it with the best of the crepes.

There's a restaurant I always go to in Bray run by a man named after a motorway service station.

This genius takes the finest grass, matures in a lavish oaken outhouse which would serve as a palace for most people, until it becomes connoisseur standard hay. The hay is fed to a rare breed of horses, all of whom can trace their lineage back to the mighty stallion Byerly Turk, one of the three fathers of the Arabian thoroughbred herd.

After a day or two the horse evacuates onto a sheet of the most exquisite muslin, scented with honey from camellia-fed bees. The ambrosia is transported reverently to the kitchen, where it is mixed with skill with the most wonderful ice cream ever mad, whose recipe remains a secret known only to the restauranter and, in case of his sudden demise, his cusin, Tarquin.

Then it's dolloped onto pancakes and fed to you cunts for 25 quid a munch. Tossers.

I always take a walk down Rue du Montparnasse when in paris and stop at one of the myriad creperies there for a snack and a gallon of Breton cidre.

If in Paris there's a street Crêperie on Rue Saint Jacques which is the best I've had. He allows the cheese to overlap the edges so these crisp and slightly burn.

In the Schwartzwald near Freiburg on top of a berg called St Valentine there's a cafe that does a great pancake after the long walk up it. Cream cheese, bacon and mushrooms.
